Blueberry Pie

This homemade blueberry pie features a flaky, buttery crust and a rich blueberry filling that’s sweet and bursting with natural fruit flavor. The filling is made with ripe blueberries and sugar, thickened to achieve a perfect consistency that holds together beautifully. As it bakes, the crust turns golden-brown, and the blueberry filling bubbles up through the lattice or top crust. Served warm with a scoop of vanilla ice cream, this pie is a classic, comforting dessert, perfect for any occasion.

Ingredients

Blueberry filling

  • 4 cups fresh or frozen blueberries
  • 2/3 cup granulated sugar
  • 2 Tbs lemon juice
  • 1/4 cup flour

Crust

  • 1 premade pie crust

Instructions

  • Preheat Oven: Preheat your oven to 350°F (175°C)
    Prepare Filling: In a large mixing bowl, combine the blueberries. Sprinkle sugar, corn starch, and flour over the berries, and gently mix until the berries are evenly coated.
    Assemble Pie: Pour the blueberry mixture into the prepared pie crust in your pie pan, making sure to add any sugar and flour left in the bowl.
    Add Top Crust: Cover the filling with your top crust. A classic lattice top is a beautiful option, but any style will work. Trim and seal the edges as needed.
    Bake: Place the pie on a baking sheet to catch any drips. Bake in the preheated oven for 30 minutes.
    Protect the Crust: After 30 minutes, cover the edges of the crust with foil or a silicone crust cover to prevent over-browning.
    Finish Baking: Continue to bake for an additional 20–25 minutes, or until the filling is bubbly and the crust is golden brown.
  • Cool and Serve: Allow the pie to cool before slicing, then serve with a scoop of vanilla ice cream or whipped cream if desired.
