Ingredients
- 3 mashed bananas
- 3 Tbs ground golden flax
- 1/3 cup warm water
- 1/3 cup plant milk
- 1/4 cup oil
- 1 cup brown sugar
- 3 cups flour
- 1 1/2 tsp baking soda
- 1/2 tsp salt
- 1 tsp cinnamon (optional)
- 1/2 cup walnuts or chocolate chips (optional)



Directions
Start by preheating your oven to 350 degrees Fahrenheit. Next, in a small bowl, combine ground flax and warm water; set aside.
Next, in a large mixing bowl, mash your bananas. If you are using frozen bananas, ensure they are not cold as this can prevent the loaf from cooking thoroughly; microwave them if needed. Add the oil and plant milk, and mix well. Stir in your flax mixture.
Add brown sugar and mix until well combined. At this point, you can set aside your wet mixture and use a new bowl for the dry ingredients, but I always just mix my dry ingredients right on top of the wet ingredients before combining them together. Add your flour, baking soda, salt, and cinnamon. Gently mix them, and then fold everything together until just combined. If using chocolate chips or walnuts, fold them in at the end.
Using a metal loaf pan, oil your pan thoroughly and pour the entire mixture into it. Bake at 350 degrees Fahrenheit for 45 minutes. After 45 minutes, gently cover your loaf with foil to aid in baking without allowing it to brown too much. Continue baking for an additional 15-20 minutes, or until a toothpick inserted into the center comes out clean.
