Introducing my simple healthy zucchini bread recipe! This simple twist on a classic favorite is packed with shredded zucchini, giving it a light, moist texture. It bakes to a perfect golden loaf every time, making it an ideal choice for breakfast or a wholesome snack without sacrificing flavor.


Ingredients

  • 1 1/2 cup zucchini ( shredded )
  • 2 cups flour
  • 1/2 cup brown sugar
  • 2/3 cup white sugar
  • 1 1/2 tsp baking soda
  • 1/2 tsp baking powder
  • 1/3 cup oil
  • 1/2 cup almond milk
  • 1/4 apple sauce
  • 1 Tbs lemon juice
  • 1 Tbs vanilla
  • 1 tsp cinnamon

Directions

Preheat the Oven: Preheat your oven to 350°F (175°C).

Prepare the Zucchini: Shred the zucchini and set it aside.

Combine Wet Ingredients: In a large bowl, mix the sugars, oil, applesauce, lemon juice, and vanilla until well combined.

Add Dry Ingredients: Sprinkle the flour, baking soda, and cinnamon over the wet mixture. Gently stir until just combined.

Incorporate Zucchini: Fold in the shredded zucchini until evenly distributed throughout the batter.

Prepare for Baking: Pour the batter into a greased or sprayed loaf pan, spreading it evenly.

Bake for 50 minutes, you can bake multiple loaves at a time but might have to add to bake time.
